5 Minute Cucumber Salad Recipe

What’s the first thing that comes to mind when people say diet or healthy eating?  For me, it’s salads!

While I do love compiling a good salad with a base of leafy greens, sometimes I long to change it up.

That’s why I came up with this quick little cucumber salad.  At only about 35 calories a serving, this low cal salad is fresh and packs a huge flavor punch.  This recipe is for 1 person but could easily by doubled, quadrupled, or whateverupled for a large group or potluck.

So if you’re hungry for a quick lunch side and you’ve got 5 minutes to spare, then this is for you.

5 Minute Cucumber Salad Recipe

Makes 1 serving

Prep Time:  5 minutes

Pro Tip:  You can make ahead and refrigerate for an hour for an even bigger flavor explosion.



1/2 of a raw Cucumber (chopped)

1 tbsp. Red Wine Vinegar

1/2 tsp. Cilantro (For Fresh, mince a small bunch. For Dry, just measure it out)

1/2 tsp. Parsley (For Fresh, mince a small bunch. For Dry, just measure it out)

1 Garlic Clove (minced)

1 Pinch of Crushed Red Pepper Flakes (You can increase that to 1/4 tsp. if you like it spicier.)

Black Pepper to taste



  1.  Toss the chopped Cucumber in a bowl with the Red Wine Vinegar, Cilantro, Parsley, Garlic, Red Pepper, and Black Pepper.  Make sure to coat the entire salad thoroughly.
  2.  If you are refrigerating for later, cover the salad and put it in the fridge for about an hour. If you are eating it right now like I did, then dig in to this refreshing and tasty afternoon treat!
